
Apple Cinnamon Baked Oats

Ingredients
- ½ cup gluten free oats
- 1 egg
- ½ a rip banana
- ¼ cup unsweetened vanilla almond milk
- 3 tbsp pure maple syrup
- 1 tsp vanilla extract divided in 2
- ¼ tsp baking powder
- 1 tsp cinnamon divided in 2
- ½ an apple sliced
- 1 tbsp water
- 1 tsp coconut oil
Recipe
- Preheat your oven to 350 degrees
- Heat your coconut oil in a small frying pan on medium heat
- Add your sliced apple, 2 tbsp maple syrup, ½ tsp cinnamon and ½ tsp of vanilla into your frying pan.
- Cook your apples down, stirring regularly to avoid the syrup burning. When the apples have cooked for 3-4 minutes, lower the heat to medium-low, add in the water, cover and cook for another 3-4 minutes.
- Once the apples are cooked, remove from the heat and set aside
- Combine all remaining ingredients into a blender or food processor. Blend well until the oats are mostly broken down.
- Add the apple mixture to the bottom of an oven safe single serve ramekin.
- Slowly pour your batter over the apple mixture.
- Bake in the oven for 20-23 minutes until cooked all the way through
- Serve hot- you can also add more maple syrup when serving if you like your oats on the sweeter side.
**Caution- the ramekins will be very hot when taking out of the oven. Make sure to be careful when eating your oats to avoid getting burnt!
